Padron Peppers
The Padron pepper is from the Galicia area of Spain. This pepper is the Spanish version of the Asian Shishito. Like the Shishito, they are picked when green. If you are frying them it is recommended that you remove the stem because they are bitter. If you roast them, leave the stem on and use the stem to hold the peppers while eating.
