Favorite Recipes

We love to grow because we love fresh vegetables in our favorite recipes. Here are a few of the things we bring to our table throughout the growing season. 

Roasted Shishito Peppers

The first time I ate roasted Shishito peppers was in Boise, Idaho. It was such a tasty appetizer I wanted to make it for the family but had an impossible time finding fresh Shishito peppers in the store. Answer. We grow our own. It is one of our family favorites. Easy to make and so delicious and nutritious to eat. Try it with the dipping sauce we included in the recipe.. Yum.

PF Chang's Stir-Fried Spicy Eggplant

I enjoy eating at PF Chang's and my favorite menu item is the Spicy Eggplant. Since we love to grown eggplant on the farm, I was fortunate to find a copy cat recipe online that is scrumptious and easy to make. Some of the ingredients can be found at a local Asian market or ordered online.

Eggplant Parmesan

When I was in my twenties, many moons ago, I had the wonderful experience of watching my boyfriends Italian grandmother make homemade Eggplant Parmesan. The boyfriend didn't last but the recipe has lived on as a favorite for our family. I have to admit that this recipe takes time but  it's worth it if you like Eggplant Parmesan. or are trying it for the first time.

Zucchini Bread

I really believe I grow Zucchini to make sweet zucchini bread. This recipe is our family favorite and no matter the variety of zucchini this is always moist and delicious.

Boursin Cheese Roasted Bruschetta

One of my favorite appetizers in the summer is a bruschetta with juicy, vine ripened farm tomatoes. I started adding Boursin Cheese last year and now this recipe has become everyone's favorite. A drizzle of balsamic glaze adds a layer of sweetness that can't be beat.

If you love creamy dipping sauces you should try this recipe. We grow eggplant on the farm and this recipe is wonderful in the summer with pita or naan bread for dipping. Give it a try.

Cucumber Tomato Salad

We love the fresh flavors of summer. This salad is easy, flavorful and a light salad option.

You can use any type of tomato, and either a red or sweet onion. We also like to add a sliced  pepper or garbanzo beans for an additional flavor and texture.

Lemon Olive Oil Cake

Don't be afraid of the olive oil in this cake. It makes a deliciously moist cake that your family will love. It isn't a super sugary desert but perfect for the end of a meal or served at brunch or actually any time of the day. You will read that I add an extra lemon, because I like the added flavor.
