Shishito Peppers
A shishito pepper is a mild East Asian variety of chili pepper. It is small, slender, and typically finger-length (about 2–4 inches long), with thin, wrinkled skin and a slightly curved shape that often folds inward at the tip—resembling a lion's head (the name "shishito" combines Japanese words for "lion" and "chili pepper").
Flavor-wise, shishitos are generally mild and sweet, with grassy, vegetal, and subtle citrus notes—much closer to a bell pepper than a spicy chili, however, once in a while you will eat one that is noticeably hotter due to growing conditions like sun exposure, adding a fun "roulette" element when eating them.
They are popularly blistered in hot oil, grilled, or pan-fried until charred, then seasoned with salt (often flaky sea salt) and sometimes lemon—served as an easy, snackable appetizer. The whole pepper is edible except the stem, which can serve as a handle.
