Vidalia Onions

Vidalia onions are a famous variety of sweet yellow onions known for their exceptionally mild, sweet flavor and crisp texture, often described as one of the sweetest onions available. Unlike typical onions that can be sharp and pungent, Vidalias have low sulfur content (due to the unique low-sulfur, sandy soil in their growing region), resulting in high sugar levels—around 12% compared to about 5% in most onions. This makes them enjoyable raw, without the strong bite that brings tears to your eyes.
 
They have a distinctive flattened, squat, or globular shape (wider in the middle and narrower at the ends), with thin, pale golden-yellow to light brown papery skin encasing firm, juicy white flesh with layered rings.
 
Their sweetness and mildness make them versatile: excellent raw in salads, salsas, sandwiches, or even eaten like an apple; or cooked by grilling, roasting, baking whole, caramelizing, or sautéing.
